Yes, some verbs may take both auxiliary, and the meaning change.
Être monté(e)(s) : Je suis monté = statement, and monté is like an adjective for the Sujet. This verb is intransitive by the way, as only the agent is concerned by the past participe.
Avoir monté : now the verb is transitive, and we wait for what it has been climbed.
Le verbe dîner est particulier. It is a verb, but also a noun as مصدر and means : to take the last meal of the day in the evening. So the Sujet is not eaten, but the meal.
B :
1- Elle a mangé tous mes sandwiches !
2- Je suis allé(e) au restaurant avec Sophie hier soir.
Remember, the past participe is like an adjective for the agent > agreement. If je is feminine, so add the mark of feminine.
3- Où est-ce que vous avez mis mon dictionnaire ?
4- Ils ont (sont) dîné avec le directeur et sa femme.
5- Il a demandé une augmentation ce matin.
6- Nous sommes venus avec Paul et Martine.
7- Tu as lu le journal aujourd'hui ?
8- Elles sont allées faire les courses.
Here, necessary agreement.
9- J'ai fait tous les exercices du livre.
10- Il est (a) monté au dixième étage par l'escalier !
Il est monté. > the sentence is complete. Now, we can add a precision, where /où ? > au (à+le) 10ème étage.
Il a monté... > here the sentence is incomplete, and wait the مفعول به. Il a monté 10 étages. Here, 10 étages comes without any preposition, and we named this kind of مفعول به un COD (Complément d'Objet Direct). Direct because no preposition needed for the relation between the verb, and the place of effect of the verb.
See the other kind of french مفعول به :
Il a donné le livre à Bilal.
le livre = COD
à Bilal = COI (Complément d'Objet Indirect). Indirect because needed a preposition for the reciever of the book.
Tell me what you want to know about كان and the french Imparfait.
كان means a continuous and same action, in the past. This is also the meaning of l'imparfait.
Amazing, it's the opposite : no need auxiliary for l'imparfait in french, while in arabic yes, and no need auxiliary for arabic passé composé, but needed in french.

All this sentence may be also conjuguate with le passé composé., but the meaning change, example :
Nous aimions faire la cuisine = habit.
Nous avons aimé faire la cuisine = 1 particular moment.
If a sentence with l'imparfait may be change for le passé composé (even if the meaning is different), le passé composé can't be change by l'imparfait in some case, exemple : Il s'est levé ce matin à 5h00. This sentence can't reflect an habit (a repetition) because of ce matin (particular and single moment).
B - Passé composé ou imparfait?
1. Je suis allé(e) (Je allais) chez le dentiste hier. (aller)
> hier = single and particular moment.
2. Quand il était adolescent, il jouait (a joué) au football. (être) (jouer)
To be young is not a single moment, but many years, so it denote repetion "to play football".
3. À cette époque-là, ils tenaient une brasserie place d’Italie. (tenir)
4. Ils ont randonné dans les Alpes le week-end passé. (randonner)
5. Nous dînions dans ce restaurant tous les samedis. (dîner)
Oui : all saturdays = repetition.
6. Si on prenait un café ? (prendre)
Here grammatically particular : this sentence start with si, and l'imparfait here denote the conditional.
7. Tu as eu l’air fatigué. (avoir)
Both possibilities : Tu avais l'air fatigué (large moment) vs Tu as eu l'air fatigué (particular moment).
8. Chaque jour, il écrivait une lettre à son amie. (écrire)
Chaque jour = habit.
9. Je regardais un film quand elle est arrivée. (.) (regarder) (arriver)
Explain all the reasons to put a final -e to arrivée.
10. La campagne était si belle. (être)
C- Write the following sentences in French using the passé composé and the imparfait appropriately:

Yes, as in arabic, the concept of l'imparfait need an auxiliary in english. Was = كان.
-They were speaking French.
Ils parlaient français.
- She invited her friend.
Elle a invité sa ami.
- I watched television every day.
Je regardais la télévision tous les jours.
Tous les jours = habit. But if we want to create an emphasis, we could say : J'ai regardé la tv tous les jours = each time was a particular time, a new one. But with Je regardais la tv tous les jours = all these "watching of tv" are collected in one global moment.
- When you arrived, I was eating dinner.
Quand tu es arrivé, (arrivé ,Je) je dînais. (mangeais le dîner)
Here je mangeais denote an unknow lasting momemt, starting before the moment when "tu" cames. If we change the tense, we change the meaning : Quand tu es arrivé, j'ai dîné = I start to eat only when you arrived.
- We went up and played cards.
Nous sommes montés et avons joué (la) aux cartes.
Not the same auxiliary for the verb monter and jouer.
- We were playing when Lisa called.
Nous jouions quand Lisa a appelé.
